Would it be okay to brown the ground beef and pancetta in a separate pan until done just long enough to render the fat (i.e., 1/2 to 2/3 done) and then drain the meat mixture through a cone-shaped or rounded strainer and THEN add the mixture to the vegetables to continue cooking?

Hi Marjorie, pancetta doesn’t turn brown like ground beef does; it may get a little darker/caramelized on the edges, but it does maintain that pink hue.
